I love spaghetti squash. There are so many fabulous recipes you can whip up and indulge in with this little noodle impostor. Not only is it delicious but it has some great nutritional benefits too. Spaghetti squash is highly rich in beta carotene, which is essential in preventing atherosclerosis. It also has numerous health benefits especially for people with insulin deficiency. The fact that spaghetti squash has a lot of potassium makes it the ideal diet for people with blood pressure. It can amazingly lower high blood pressure if consumed over time. The folate contained in the spaghetti squash helps in strengthening the walls of blood vessels besides enhancing blood circulation. Pregnant women are encouraged to consume spaghetti squash more frequently since the folate contained in it helps in preventing birth defects which can occur when a woman is delivering the baby. Spaghetti squash is a great source of both vitamin C and vitamin A, which are also antioxidants. They can, therefore, prevent cell damage. Because spaghetti squash has plenty of vitamin B, it also promotes proper cellular functioning. This is only a few of the benefits, but hopefully it is enough to send you to the grocery to buy a few. Caressing the strand of pearls between her calloused fingers she remembers the journey. Each gem was whiter than white and beheld a story of its own. In the beginning of her faith walk the “virtuous women” overwhelmed her and seemed unobtainable. But as the years passed she pressed in and took hold of one virtuous pearl at a time. With each acquisition came tears, opposition, and a new measure of faith, but she overcame allowing her Beloved to shine through her flaws. Years later with her threads almost complete she smiles softly and the lines of age bring radiance to her face. Around her neck lay the rare pearls of virtue including: faithfulness, goodness, strength, endurance, generosity, honor, wisdom, kindness, praiseworthy, merchant, farmer, realtor, manager, importer, manufacturer, good business woman, excellent wife and mother, fruit bearing, and fear of the Lord. She looses her breath for a moment reflecting on the distance she traveled. The once unobtainable is now laced and nestled right above her heart. She recognizes her journey of pearls has been daily embedded in reading His Word, praying with fervency, and fellowshipping with Him alone. It started with an empty thread in her out-stretched hand, and He stranded her pearls one virtuous gem at a time. Her worth is far more than rubies. She is a woman of radiant virtue. The weather here in the south is beginning to cool down, and it is lovely. I love a hot bowl of soup on a cool day. However this tasty soup recipe is great for any day. I love to couple this with organic corn muffins, Garden of Eatin chips or a small side salad. I also love to add sliced avocados to the top. You can add more veggies and you can leave the chicken out if you prefer. So hop on in the kitchen and get cooking. And don’t forget to make extra. It is perfect to freeze and thaw out on a busy day for supper. Ingredients 3 tablespoons olive oil 1 onion chopped 3 garlic cloves, minced 3 basil leaves chopped finely 5 thyme twigs (stripped off the twig) 2 cups shredded cooked free range chicken breast (about 10 ounces) 1/4 cup dry white wine (optional) 1 tablespoon chopped seeded jalapeño pepper (optional) 2 tablespoons ground cumin 1 tablespoon chili powder 1 box no-salt-added free range chicken broth 2 (14.5-ounce) cans diced peeled organic tomatoes (BPA free), undrained OR 1 container organic cherry tomatoes cut in half 1 jar of organic tomato sauce 2 cans of organic black beans Organic (non GMO) tortilla chips (about 8); Garden of Eatin is a great brand 1 avocado diced grass fed cow cheese (to sprinkle) Sea salt to taste Preparation Sauté’ onion and garlic in olive oil over medium heat (about 3 minutes).  Stir in chicken and next 12 ingredients (chicken through tomato sauce); bring to a boil. STANDING AT THE CROSSROADS

Darkness seems more evident than light. My heart is numb from “over-thinking,” “over-protecting,” “over-reacting,” and “compartmentalizing” my life. I question the strength of my faith and wonder if God cares that my heart aches. I have continually cried out to Him–but no answer thus far. I have seen Him work in ways that I never imagined. Yet at this particular “crossroad,” doubt suffocates my thoughts, fear tells me “I am alone,” and the next step is uncertain. I cried out to Him once again. “LORD, I need strength, guidance and truth. Anything less, Lord and my heart will give way. Your truth is the only foundation upon which I am able to stand. Please Lord hear my cries, and shine Your light in my heart.” I opened my Bible and saw these words of hope, love, light, grace, and truth: “Then He said to Thomas, ʻPut your finger here; see my hands. Reach out your hand and put it into my side. Stop doubting and believe.ʼ” (John 20:27-28) I felt the sweetness of the Lord calling me through His Word. I was indeed standing at a crossroad with one foot lifted poised to step, but because doubt and disbelief crept into my heart, my foot would not come down in either direction. Through His word He was reaching out His nail scared hand and reminding me that His wounds brought and bring complete freedom, healing, and wholeness. The word Bible in Hebrew is “mikra”.
