Lemony Baked Salmon

Prep Notes:


1 whole side salmon, scaled, with skin, pin bones removed

2 teaspoons sea salt

2 teaspoons herbamare seasoning

1 teaspoon fresh black pepper

1 teaspoon mustard powder

1 teaspoon coarsely chopped fresh rosemary leaves

1 lemon, very thinly sliced

1/2 small red onion, thinly sliced

8 cloves garlic, thinly sliced

1/4 cup grape seed oil

Juice of 1 lemon


Preheat the oven to 375 degrees F.

Rinse salmon and pat dry. Sprinkle the salmon with the salt, herbamare, pepper, mustard powder, and rosemary. Place the lemon slices over the fish fillet along with the sliced onion and garlic slivers. Mix together the grape seed oil and lemon juice then drizzle the fillet evenly. Cover with foil.

Bake the salmon for 15 -25 minutes, or until just cooked through but still moist. Serve immediately. Can serve some of the accumulated juices to spoon over the fish or a squeeze the juice of a fresh lemon.
