Thanksgiving is here already. I love this time of the year. I am thankful for so many things and one of them is you. My health journey is not about perfection but about progress. I take one step at a time. I am privileged (and so are you) to choose to make small changes and keep moving forward while I learn from many mistakes. I love sharing my heart and recipes with you. And I pray I offer you encouragement as well. Every single one of us are genuinly unique, wildly beautiful, daily delighted in, truly worthy, and vastly loved. Each of our stories are different and that is a beautiful thing. Embrace where you are today and give thanks in and for all things. YOU ARE AWESOME!
Here is my amazing “Cranberry and Orange Sauce” recipe. It is a must try, easy to make, and simply delicious! PS- It also taste amazing with duck, turkey, beef, or pork tacos!
CRANBERRY AND ORANGE SAUCE
- 17oz. clean water
- 16oz. organic cranberries
- 1 cup coconut sugar
- 1/2 cup maple syrup, honey, or agave
- 6 tangerines or 4 oranges
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 3/4 cup chopped walnuts or pecans (optional)
Rinse cranberries well. Over high heat add water and cranberries and bring to a boil. Then reduce heat to medium, cover, and allow the cranberries to pop (about 15 minutes). After your cranberries have all popped turn heat to low. Add the remaining ingredients (except nuts) and stir well. Cover and let cook another 15-20 minutes. Add nuts the last 5 minutes if you choose. Let this cool and refrigerate. Can be made a week in advance.
Happy Thanksgiving, Blessings, & ENJOY
